1Brownie with black beans

Sounds weird? It's actually very tasty. But it's healthier. Because in this version there is a little less sugar, but more fiber, which means you won’t eat much of it.

Ingredients:

  • 400 g canned black beans (rinsed and drained)
  • 3 eggs
  • 3 tablespoons coconut oil (or olive oil)
  • ⅓ cup cocoa powder
  • pinch of salt
  • 1 teaspoon vanilla paste
  • 1 teaspoon baking powder
  • ½ cup coconut sugar (or other alternative of your choice)
  • shredded coconut for sprinkling (optional)

Preparation:

  1. Preheat the oven to 180°C and place in a small square pan for baking.
  2. Place all brownie ingredients (except coconut) into a food processor and blend until thick, creamy and smooth, then pour mixture into baking pan.
  3. Bake for 15-25 minutes or until the dough is springy to the touch. Let it cool and sprinkle with toasted coconut.

2 Baked Donuts

When you bake your donuts instead of frying them, you have more options when it comes to ingredients, and you don't have to add as much oil, which makes them healthier.

Ingredients:

For the donuts:

  • 2 cups all-purpose flour
  • ½ cup cane sugar
  • 1 teaspoon baking powder
  • 1 teaspoon instant espresso powder (optional)
  • ½ teaspoon fine sea salt
  • ¼ teaspoon baking soda
  • 1 cup cold espresso coffee
  • ¼ cup melted coconut oil
  • ¼ cup applesauce
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon vanilla

For the glaze:

  • ⅓ cup espresso or strong coffee
  • 1 tablespoon cane sugar
  • ¼ teaspoon fine seaweed salt
  • 226 g bittersweet or semisweet chocolate, finely chopped
  • 2 tablespoons coconut oil
  • sprinkle of 1 teaspoon instant espresso powder (optional)

Preparation:

  1. Preheat oven to 180°C. Spray 6-serving donut pans with cooking spray.
  2. In a large bowl, whisk together flour, sugar, baking powder, optional espresso powder, salt and baking sugar.
  3. In a medium bowl, whisk Add cold coffee, coconut oil, applesauce, vinegar and vanilla until smooth. Mix the wet ingredients with the dry ones.
  4. Divide the batter into the donut cups and bake until golden brown, about 15 to 20 minutes.
  5. For the glaze, whisk together the espresso, sugar, and salt in a medium saucepan. Bring to a boil, then remove from heat and stir in chocolate until melted. If necessary, return the pan to the heat to melt the chocolate. Whisk together the coconut oil and espresso powder.
  6. Place the glaze in a bowl and dip the donuts in the glaze. Sprinkle on top if desired.

3Vegan berry cheesecake

This is a very tasty dish that does not use cream or dairy products. At the same time, it has excellent texture and bright taste.

Ingredients:

  • 1.5 cups walnuts/almonds or mixture
  • 1.5 cups shredded or desiccated coconut
  • 1 cup pitted dates (pre-soak for 5 minutes in hot water)
  • ¼ cup rice malt syrup
  • salt to taste
  • vanilla to taste

For filling:

  • 1.5 cup blueberries (or berries of choice), frozen or fresh
  • 1 jar coconut cream (refrigerated overnight)
  • 500g cashews (pre-soaked for 4 hours or more)
  • ½ cup melted coconut oil
  • ½ cups rice-malt syrup
  • 2 tablespoons juice + zest of 2 limes
  • a pinch of vanilla
  • For decoration – frozen berries, toasted nuts – to choose from to taste.

Preparation:

  1. Grease a cake pan and line it with baking paper.
  2. Prepare the base: chop the nuts until crumbly. Drain the dates and combine with the nuts in a food processor along with the shredded coconut, rice malt syrup, a pinch of vanilla and salt. Whisk until the mixture turns into a sticky mass. Pipe into a cake tin and smooth, then chill in the refrigerator.
  3. Make the berry coloring: Heat the berries in a small saucepan over low heat or cook in small batches in the microwave until softened. Grind the berries (you can use a hand blender).
  4. Make the cheesecake filling: Drain the soaked cashews and puree them in a blender or food processor along with all the other filling ingredients except the lime zest and juice. and chopped berries (they will be added later). Beat until smooth, then divide mixture evenly between three bowls.
  5. Add the lime juice and zest to the first bowl, stir well, then spread the mixture over the cooled base and place in the freezer for 10 minutes to set slightly. For denser layers, chill the cakes slightly.
  6. In the next two bowls, place different amounts of chopped blueberries in each to create two different shades of purple—light and dark. Just add a little blueberry mixture to the first bowl and more to the second. Adding a little lime juice to each bowl will also help lighten the color slightly.
  7. Once the white cake has set in the freezer, you can place the pale purple cake layer on top, carefully smooth it out and leave it in the refrigerator for 10 minutes, then add the final dark purple top layer and smooth it out to finish the cake.
  8. < li>Put it back in the freezer for at least an hour (or as long as it takes until it is firm enough to slice).

  9. Remove the cake from the freezer and unmold to reveal its beautiful layers that change from white to purple. Sprinkle with any decorations and then cut with a hot knife for best effect.

4 Frozen bananas in sprinkles

This dessert can be prepared even with children — everything couldn't be simpler.

Ingredients:

  • 4 bananas
  • ⅓ cup melted coconut oil
  • ⅓ cup cocoa powder
  • 1-2 tablespoons maple syrup
  • ½ cup almonds, coarsely chopped
  • 8 skewers

Preparation:

  1. In a small bowl, whisk together the coconut oil, cocoa powder, and maple syrup until smooth.
  2. Cut the bananas in half and place on the bottom of a skewer, piercing it about halfway through, but not all the way through.
  3. Dip the banana in the chocolate and then in the almonds.
  4. Place on a baking tray lined with baking paper and freeze for 1 hour.

5 Berry smoothie

Smoothie – perhaps , the most dietary dish. But this can easily replace dessert due to its sweetness. It is important to prepare it immediately before serving.

Ingredients:

  • 1 liter of chilled vanilla-soy milk
  • 2 ripe bananas (peeled and cut into pieces)
  • 1 cup raspberries, fresh or frozen
  • 1 candy bar (finely crushed)
  • 1 cup ice cubes

    Preparation:

    1. Grind all ingredients in a food processor or blender. Grind until smooth.
    2. Serve immediately, garnishing with berries if desired.
    3. To make the dessert thicker and more satisfying, you can add chopped oat bran.
